Peanut Butter Banana Bread

Whenever I spy some over-ripened bananas on sale, I immediately think of whipping up a loaf of Banana Bread. We always have a loaf of this sitting on the counter. It goes great with a spread of cream cheese and a hot cup of coffee.

2/3 cup of sugar
1/3 cup of real unsalted butter
2 eggs (beaten)
1 tsp. of real vanilla extract
3 over-ripened bananas (slightly mashed)
1 heaping T. of peanut butter
1 1/3 cup of all-purpose flour
3 tsp. of baking powder
1/2 tsp. of salt
1/2 cup of chopped pecans

-Preheat oven to 350*. In a large bowl, blend sugar, butter, eggs and vanilla; stir in mashed bananas. In a medium bowl, combine flour, baking powder and salt together. Slowly add to sugar mixture in small amounts; stirring well after each addition. Fold in nuts and pour into a greased and floured loaf pan. Let stand for about 20 minute's prior to baking (this helps the rise of the loaf).  Bake for 55-60 minutes, or until inserted wooden toothpick comes out clean.  Serves 8-10.  Enjoy!
